Sweeeeeet Potato Chips!

I love sweet potatoes. They just taste sooo much better than regular potatoes, and are about a million times healthier. That means I can eat as many as I want, right? 🙂

So here it is, sweet potato chips. These are super easy if you have 1 thing (other than your Versonel Air Fryer, buy one here) – A mandolin. Trust me. You cannot make sweet potato chips without it. I tried. It didn’t work well – they were all uneven.

What you need:

Your Versonel Air Fryer

A Mandolin blade

A large sweet potato, scrubbed so you can use the yummy skin

Olive Oil

Your choice of seasonings – I used salt and a dash of maple syrup

What you do:

Slice your potato using your mandolin – you can try cutting it with a knife, but my skills were not up to par, it it shows:


Anywho, pour on about 1T of olive oil and season to taste. I used maple syrup because I love salty/sweet.

Mix it together.

Pour it in your Air Fryer, change the setting to fries, and 20 minutes later…


Tada! Yum!

And yes… I ate the whole thing!


Bacon? Really?! YES!

Fancy Farmhouse Frittata

So every now and then I like to get fancy with my food…. Or at least the names of my food! You could be boring and call this recipe a simple quiche, but Fancy Farmhouse Frittata has both flair and alliteration. And, most important of all, it’s delicious!

Here it is, my recipe for a Fancy Farmhouse Frittata in your Versonel Air Fryer – buy it here!

What you need:

~A ramekin at least 5 inches across, and of course your Air Fryer

~3 fresh eggs

~Frozen (or cooked) hash browns

~5 or so cherry tomatoes, or whatever chopped veggies you like – peppers and onions work really well too

~Milk (1/2 c at most, use less if you want a more firm frittata)

~Spray olive oil ( I am really not sure how I ever cooked a thing before this stuff was made!)

~Parmesan Cheese – grated works better than shredded, but either will do

~Shredded Cheese

~Hot sauce – optional, but I am under the firm belief that eggs are naked and wrong without hot sauce

What you do:

~Spray the bottom & sides of your ramekin with olive oil so the finished product will come out nicely

~Sprinkle in enough Parmesan cheese to lightly coat the bottom and sides – works as a killer crust!

~Throw down a thin layer of hash browns – just enough to cover the bottom

~Dice your tomatoes and throw them in next. In case you missed it, we are building layers 🙂

~Beat your eggs with the milk, mixing in some cheese and hot sauce – all to taste. I am uber lazy, so I just throw everything into my magic bullet, and it beats the eggs and mixes in the milk, cheese and hot sauce nicely

~Pour this lovely mixture on top of your other layers in your ramekin, and top with cheese. I love cheese. I put a lot of cheese in this. And everything else. See?

~Place in your air fryer. Cook on 400 for 40 minutes, or until it is solid and starts pulling away from the sides, like this…

Chicken 3 Ways

I always feel like a kitchen rock star when I pull a perfectly colored, glistening chicken out of my oven. All of the hours of thawing, cleaning, prepping, seasons, basting and cooking finally payed off and I have a beautiful bird worthy of a Martha Stewart Magazine cover story.

And then I wake up, realize this is the real world, and between working full time and raising a family, I have no time spend hours on a meal.

Lucky for me and my family, I have a Versonel Air Fryer, which you can find here. Once again I can make fabulous chicken that is the center of my meal and still have time to make mashed potatoes from a box…err… I mean lovingly boil and mash potatoes by hand while churning my own butter and pressing apples to make cider… lol

So here it is. My blog on how to make perfect Air Fried Chicken using the Versonel Air Fryer – 3 ways!

1. Boneless Skinless Chicken Breast. So good. So Healthy.

What you need:

~Two boneless, skinless chicken breasts. And guess what? They can be FROZEN! I’m Serious! I’ve done it several times, and it tastes amazing!

~Olive or avacado oil


What you do:

~Brush the chicken with a tiny bit of oil

~Season according to taste – I used parmesan cheese! 🙂

~Pop it in the Versonel Air Fryer for 20 minutes (1 full cycle on the chicken setting)


Chicken Breast

Voila. Perfect. Chicken.

2. Chicken Quarters – Leave the skin on for a totally yummy, but not as healthy crunch!

What you need:

~Two chicken quarters – I like using legs and thighs

~Olive or avacado oil

~Seasoning – get creative – try ginger and soy sauce!

What you do:

~Brush the chicken with a tiny bit of oil

~Season according to taste

~Pop it in the Versonel Air Fryer for 20 minutes (1 full cycle on the chicken setting)


Chicken Quarter

Voila. Perfect. Chicken. AGAIN!!

3. Roasted Chicken. Yup, the whole thing!

What you need:

~A small roasting chicken. Mine was 6 lbs and it was a bit too large. I burned the top as you can see, but the skin was super yummy! 🙂

~Olive or avacado oil

~Seasoning – Go traditional! All you really need is salt & Pepper

What you do:

~Clean your chicken like usual and make sure to pull and necks and other gross parts out of the cavity

~Brush the chicken with a tiny bit of oil

~Season according to taste

~Feel free to throw some small potatoes in there, but only if there is ample room.

~Pop it in the Versonel Air Fryer for 40 minutes (2 cycles on the chicken setting)

Spaghetti Squash

So everyone knows that complex carbs are bad for you, which means bye-bye to pasta. Nope. Not this blogger. I love my pasta and no one is going to take it away from me! But there a way out – Spaghetti Squash! It’s a vegetable, so it’s totally healthy, right??

So here we go – Spaghetti Squash a la Versonel Air Fryer, which you can buy here.

Here is what you need:

~An average size spaghetti squash, cut in half lengthwise and seeds removed

~Olive Oil

~Salt & Pepper & Oregano

~Cherry Tomatoes

~Parmesean Cheese

What you need to make spaghetti squash

Here is what you do:

~Take 1 half of your squash and punch holes in the skin side for ventaliation

~Turn right-side up and douse liberally with olive oil

~Sprinkle on your seasoning to taste

~Fill the seed void with tomatoes

~Cook for 1 hour at 375 or until soft in your Versonel Air Fryer.

~Use your fork to scrape out the squash and it really will look like spaghetti.

~And roasted tomatoes – don’t get me started with how AMAZING they taste!

~Sprinkle with Parmesan cheese and YUM!

Soft Boiled Eggs

Yes, you read right – Soft Boiled Eggs in an Air Fryer!

Eggs. I love eggs. Normally I am a vegetarian, but my aunt has some really happy chickens that lay a surplus of eggs and she is more than happy to share them with me.

So one uber lazy Sunday, I wanted eggs but really didn’t feel like the hassle. But wait – I have an air fryer! Let’s see what I can do.

Soft Boiled Egg – Yes, really!

Ok, soft boiled eggs aren’t rocket science to begin with, but I seemed to have inherited my grandmother’s awesome skill of boiling everything over – even water. Enter the Versonel Air Fryer.

Step 1 – Drop the egg in. Not too hard! You don’t want it to crack!

Step 2 – 330 degrees for 8 minutes.

Step 3 – Drop test – just for fun 🙂

Step 4 – Put in an ice bath until cool for easy* peeling!

*If you have farm fresh eggs, there is no way that I have found to easily peel. Good luck!

Step 4 – Put over spinach with some cheese and seasoning, and break with a fork. I was like a kid at Christmas – so beautiful!egg over spinach

Mini Personal Apple Pies

Like most people, I am constantly resolving to lose weight and be healthier. And, like most people, I manage to stretch the limit of what is “healthy”. I got the Versonel Air Fryer with the LCD Touch screen, and instantly my mind started racing with how much healthier I would be now that I could air fry my foods instead of using oil for a deep fry.

Here is how that thought process went:

Ohh, I can make apple chips, I love apple chips… but they get kinda bland… but since I am using air to fry them, it won’t hurt much to sprinkle some cinnamon and sugar on them… yes, like apple pie… I love apple pie… OH! I wonder if I can make apple pie in my air fryer?

The answer is YES!! Even better, you can make a personal apple pie that tastes better than McDonalds. And, you know, since it’s personal size you can eat just one… or five 🙂

Here is what you need have:

~Egg roll Wrappers

You can get them at any grocery store, usually stuck behind the tofu in the produce ection

~Apple Pie Filling

You can use canned, but I am lucky enough to have a mom who makes apple pie filling in a mason jar so we can have “fresh” apple pie year round, and it has that extra-special ingredient – love 🙂


~Cinnamon and Sugar

If you are like me, and on the coconut sugar bandwagon, even better! I love coconut sugar, and you can buy some with the cinnamon already mixed in – score!

Here is what you need to do:

~First, and I will try to contain my excitement, you don’t have to preheat anything! Right?! No preheating the oven. No warming up oil on the stove – NOTHING! I love it!

~Warm up some butter and sprinkle cinnamon and sugar in it. No, don’t measure. Just use your personal preference.

~Ok. Lay out an egg roll wrapper. If you are like me and can’t roll to save your life, use two

OH! But then you can spread some of that butter/cinnamon/sugar mixture in between the two layers for another level of deliciousness

~Spoon on some apple pie filling. Not much. Again, if you are an expert roller, pile it in. If you are like me, use less. My piles were the size of golf balls

~Wrap it up!

~Use some of your yummy butter mixture to seal the edges – don’t be afraid to roll it around in the butter (sooooo bad for you, but sooooo yummy!)

~Plop it in your air fryer at 280 for about 20 minutes, or until its browning… or until you can’t the epic smell of apple pie goodness coming out of your newest favorite kitchen appliance

~Take out carefully – tongs help! Sprinkle with more cinnamon and sugar and please, let it cool! I know you will want to dive right in, but if you wait you can pick it up and eat it.
